Smokey Lion’s Mane Crab Cakes
Lion’s Mane is a diverse mushroom and can be used in countless culinary creations from pulled pork and stroganoff to tasty crab cakes. Whether you are looking for a crab alternative or to help increase your traditional crab cake yield, lion’s mane will bring a healthy fun twist to your kitchen.
Ingredients

1 lb. - Lion’s Mane Mushrooms

1/2 - Sweet onion, chopped

2 tbsp - Mayo

2 - Eggs

2 tsp - Worcestershire sauce

2 tsp - Granulated garlic

1 tsp - Smoked paprika

1 tsp - Salt
-
1 tsp - Pepper

1 cup - Breadcrumbs

3 tbsp - Avocado Oil

1 - Lemon (optional)
Directions

Shred Lion's Mane by hand into pieces that are similar in size and texture to traditional crab.

Finely chop 1/2 a sweet onion.

Use a large bowl to thoroughly mix mayo, egg, sweet onion, Worcestershire sauce, granulated garlic, smoked paprika, salt, and pepper.

Begin to mix Lion’s Mane shreds and breadcrumbs into the existing mixture until evenly covered.

Handcraft 10 equally sized cakes

Preheat a large pan with avocado oil to medium-high heat.

Place cakes into the pan, cook until crispy and lightly brown on each side, roughly 6 minutes total.

Garnish with lemon wedges and trader sauce.
