Sichuan Fried Oyster Mushrooms

Ingredients

1 pound (400g) Blue Oyster Mushrooms

Oil for frying, around 4 cups

1 egg

6 tbsp potato or cornstarch

2 tbsp water

Pinch of salt

Pinch of black pepper

Sichuan peppercorn salt
Directions

Slice your oyster mushrooms into 1/2 inch strips.

To make the batter, mix the egg, starch, water, salt, and pepper until well combined.

Coat the mushrooms in the batter by dipping them by hand, or add the mushrooms into the batter bowl.

Heat 4 cups of oil in a wok or pot. You can stick a wood chopstick or spoon in, and if bubbles form around the chopstick or spoon, the oil is hot enough. Once ready, gently add the mushroom strips into the oil. Fry until the mushrooms turn slightly golden. Remove and set aside.

Optional for extra crispy mushrooms: After you finish the batches, heat the oil to a higher temperature and refry the mushrooms for 4 to 6 seconds. This second frying method helps the batter become extra crispy.

Serve immediately! Season with extra salt, Sichuan peppercorn powder, and dip in a variety of sauces. We like chili oil and Sriracha mayo!
